Healthy and Fast Meals




Delicious Chicken Noodle Soup
***This soup is compliments to my great friend and awesome cook Jessica***

Although, this meal is not fast, it is an easy Sun. night dinner that will provide you meals all week long! 
Ingredients

1 Whole Chicken
1 large bag of carrots cut up
1 bag of celery chopped
1 onion quartered
2 bullion cubes
1 c. of chicken stock 
2 tbsp. of whole peppercorns
1/4 cup of parsley (fresh or dried)
1 large parsnip peeled
1 bag of egg noodles (wide)

Directions:
1. In a large stock pot, place washed chicken (with insides), 2 carrots peeled and halved, 3 center stalks of celery with the leaves attached, the quartered onion, halved parsnip, 1 cup of chicken stock, 2 bullion cubes, peppercorns and 1/4 cup of parsley. Chop the remainder of the celery and carrots.

2. Add enough water to the stock pot, so the water is 1-2 inches higher than the chicken. Boil for 30 minutes on high. Simmer on medium heat for an hour. 

3. After the chicken is done cooking, take it out of the stock pot. On a cutting board, peel off all of the meat, set aside.(Look for the wishbone and set it aside :) Begin to boil the noodles in a separate pot.

4. Add the chopped vegetables to the stock pot and boil for 20 minutes.

5. Combine noodles and chicken to stockpot and enjoy!

I know this sound like a lot, but once you begin, it is really easy and will be worth it in the end!
